Valentine Draw winner was Patricia A. who win a heart mug, rose tea, heart shaped sugars.                              

St. Patrick’s Day Draw winners both won a selection of Irish Teas.

Easter Draw was won by Janet L. who receiver a wrapped collection of jams and a collection of

all of our Chocolate Teas.

Spring Draw winner was Barbara O. who won and assortment of tea to drink while she admires her garden.

        Break Out the Iced Tea
What a climate we live with, cool evenings and hot days! I think this is just right for tea drinkers. You can have a hot tea in the evening, save the rest of the tea in the fridge over night and have iced tea all day long. Great for the kids too!
For traditional black iced tea use the strong tea that is made or saved, add ice, sugar (to taste) and a wedge of lemon or lemon juice and like magic you have a healthy cool drink for pennies per glass.
For green or white iced tea add some sugar (to taste) and ice and you have another healthy refreshing drink!
We have some custom made tea bags to make Black Iced Tea. Basically you want to make a strong tea because when you add ice it’s like adding water and you do not want to water the tea down too much. Remember strong tea means brewing with more tea not just brewing for a long time that will just make the tea acidic. Brew a normal pot of tea but with more tea and enjoy.

Brewing Guide
Use fresh water & (8oz) of water per tsp. of tea
Brewing Black Tea & Rooibos
-Use boiling water (220F)
-Steep 3-5 minutes
Brewing Green & Yellow Tea
-boil water & let cool to 190F max.
-steep 1-3 minutes
-can be re-infused 2-3 times
Brewing Oolong Tea
-boil water & let cool to 190F max.
-steep 1-3 minutes
Brewing White Tea
-boil water & let cool to 180F max.
-steep 4-7 minutes
-Can be re-infused 2-3 times
Brewing Herbal Tisanes (‘Tea’)
-Use boiling water (220F)
-Steep 7-10 minutes
Brewing Yerba Mate
-Boil water & let cool to 160F max.
-Steep 4minutes
                                                                           
 
 
 
 
 
              Time for Iced Teas and Drinks
 
Iced Tea Preparation Recipe
 1. Brew a tea concentrate by using six tea bags with 1 liter of boiling water.
 2. Fill a pitcher (2 liter +size) approximately 2/3 with ice.
 3. Steep the tea for 8-10 minutes then pour the hot tea over the ice in the pitcher. If necessary, add more ice
      Until the concentrate is diluted to nearly double or more its volume.
4. For traditional iced tea add lemon juice & sweetener to taste. Decorate with a slice of lemon or lime.         
    
Rhubarb Tea Punch
-4 cups brewed tea            
 -4 cups rhubarb cut into 1 inch sliced
-1 lemon cut into sections   
-1 quarter cup of sugar
Combine the above in pot and cook until rhubarb is tender. Serve over ice. Makes 4 to 6 servings.
 
Green Tea Ginger Shake
-3 cups of Japanese Sencha      
 -cooled 2 cups vanilla frozen yogurt     
 -half teaspoon ground ginger
Blend the above and serve in your favorite glasses. Makes 6 servings
 
 
Orange Tea Drink
-3 cups of strong cooled tea    
 -6 tablespoons of frozen orange juice       
 -3/4 cup Orange Sherbet
Blend the above and serve in your favorite glasses. Makes 6 servings
 
 
Don’t want to make fancy drinks (even if they are great!), then try the flavored teas.
 
Remember that many of our flavored teas like; boysenberry, peach, quince, orange make great Iced Teas on their own!
